Egg Muffins.

Breakfast foods are the best. Can I get an amen?!

 Yet it's so easy to skip when we're in a rush. I'm guilty of waking up 10 minutes before needing to leave for work and only having enough time to throw clothes on and dash out of the door. So here's a simple recipe to do on those Sunday nights and you're set with your breakfast for that crazy week! You're welcome in advance ;)

Egg Muffins.

Ingredients:
1/4 cup Shredded Cheese
4 Tomatoes 
1/2 cup Spinach
1 cup sliced ham (or 4 slices of turkey bacon)
12 egg whites


Instructions:
1. Preheat oven to 350*


2. Dice tomatoes, ham, & spinach
Some like to also add onions




3. Cover pan with non stick spray and add diced ingredients with cheese





4. Add egg whites to 1/3 from the top





5. Put in oven for 20-25 minutes. Wait until the top of the eggs are golden.
Let sit for 10-15 minutes




On those rushed mornings, throw them in the microwave for 30 seconds and you're good.
Don't compromise breakfast. 
You're worth it ;)

You should know, my mother who cringes when I say "it's healthy" when cooking even liked this recipe.

Open-Faced Bean Sandwich

Pinterest is the place to find recipes, especially when you are not creative in the kitchen. This recipe is super fast and refreshing!


1/4 can of rinsed,drained White Beans (I added in black beans as well)
1 tsp of Olive Oil
Salt & Pepper
Whole Wheat Bread
Sliced Cucumbers


  1. Mash beans
  2. Mix in olive oil and salt & pepper to preference
  3. Toast bread
  4. Add sliced cucumbers
Try it!

Bean Burgers.

One of my friend's mom made bean burgers and after reluctantly trying it, I liked it! I must say that I'm slowly but surely expanding my horizon as far as my taste palate. This recipe took me about 20 minutes and serves about 6!
Ingredients:

2 Cans of Black Beans
Drained and Rinsed

1 Cup of Salsa
Drained

1 Box of Jiffy Corn Muffin Mix

Whole Wheat Rolls

Instructions:
1. Preheat frying pan
2. Use 2 tbsp on light olive oil
3. Put smashed black beans in mixing pan
4. Mix other ingredients
5. Form patties- 1/3 cup each

I know some that like to put low fat sour cream and onions with it.

But I'm boring and a pile of tomatoes do the job for me.

A Fruity Salad.

I must say I've always been a strong believer that fruit does not belong in a salad. For my brother's birthday last year he took us to a hole in the wall restaurant, where my mom got a salad with fruit and I reluctantly tried her food and was surprised how much I loved it. It's so delicious and refreshing! So I strongly suggest trying this at least once. I thought I would hate it, but oh how I was wrong. And for those who think that produce is expensive, don't go to your local grocery store. Go to your local farmer's market. They are god sends! The produce is super fresh, better quality, and you get more for your money. With $10 I got 3 huge squash, 5 zucchini, 3 bell peppers, and 5 cucumbers. 

Spinach
Kale
Strawberries
Blueberries
Turkey
Mozzarella Cheese
Boiled Eggs
Light Raspberry Vinaigrette 


This week was a bad week for me because I didn't do meal prep, and yesterday I made this salad in 5 minutes before work. 

Fast. Easy. Yummy.

Zucchini. Squash. Veggies

I got this recipes from a fellow beach body coach and I had my doubts, but it is so scrumptious!!


Zucchini
Squash
Ground Turkey
Kale
Corn
Pinto beans
Soy Sauce
Spices- Parsley & Black Pepper

  1. Cook ground turkey.
  2. Slice zucchini & squash.
  3. Add all ingredients with spices and steam for 5 minutes.

Chicken, Broccoli, & Pasta

Ask my family and they will all say that I'm not the cook in the family. My skills in the kitchen are very limited, so I've been looking for recipes that are good for beginners, not to mention especially ones that people with a broken wrist can still do. 


Whole wheat noodles
Broccoli
Spinach
Chicken
Seasoning

  1. Cut chicken into thin slices. Cook with seasonings (soy sauce & montreal chicken spices). Add spinach and steam for about 3-5 minutes
  2. Add in noodles & broccoli.
  3. Add more seasoning if desired and let it sit for 5 minutes.
I love it!! Super easy and tasty! For some that may seen super basic, for feel free to improv off of it and let me know what you come up with! I lack in the creativity department, so suggestions are always appreciated :)

Quick Snacks

Sorry for the silence lately. 
Due to some fractures and broken bones from a car accident, I'll be focusing on easy, healthy recipes and eating clean!

Now for some simple, fast snacks you could make.
...even for those with one functional hand.

Cocoa Roasted Almonds
When craving chocolate, chose the healthy alternative.


Fruit
Simple.
Slice.
Dip in natural peanut butter if you have a sweet tooth.

Granola
Have snacks in your car.
Random hunger? You have a healthy snack compared to fast food.

 Eggs
Boil.

 Squash & Zucchini
Slice.
Season.
Oven at 300*
15 minutes.

Bananas
Slice.
Natural peanut butter on top.
Freeze.

I know these snacks may seem too simple or dumbed down, but they've helped me keep on track.
It's the baby steps that can make or break your process.
